Kelp Hash Browns

Ingredients
3 potatoes
½ sweet onion
Olive oil
Large handful of dried kelp
Slosh of soy sauce (to taste)
Instructions
- Place kelp in a bowl and cover with fresh water to rehydrate.
- Chop onion and potatoes into bite sized pieces and put them in a pan with olive oil on medium-high heat.
- Gently squeeze seaweed to remove excess water and add to the pan. Add soy sauce and stir.
- Cook covered for approximately 30 minutes, stirring occasionally. Take the lid off and turn up the heat for 10 mins or so to brown the potatoes.
- Serve hot ♥
