Kelp-Rice-Soup

Based on a childhood memory of something my father used to cook from (probably) dried kelp from the (probably) Asian supermarket in Germany. The combination of Kelp with rice reminds me of sushi a bit. So, I guessed that any flavors I like with sushi will likely fit well in the soup. 

 

Ingredients

Kelp

Butter

Rice

Salt

Vinegar

Sugar

Soy sauce

Fresh ginger (grated or finely chopped)

Chili pepper flakes

 

Instructions

  1. Heat lots of kelp in butter in a pan. Cook until softened, but not crispy.
  2. Cook rice in a slight excess of water, with a bit of salt and splash of vinegar.
  3. Once rice is tender, add some sugar and soy sauce, along with some ginger and chili pepper spice. You can be creative with what spices to add!
  4. Add kelp to the soup and serve hot!
