Kelp Hash Browns

Ingredients

3 potatoes

½ sweet onion

Olive oil

Large handful of dried kelp

Slosh of soy sauce (to taste)

 

Instructions

  1. Place kelp in a bowl and cover with fresh water to rehydrate.
  2. Chop onion and potatoes into bite sized pieces and put them in a pan with olive oil on medium-high heat.
  3. Gently squeeze seaweed to remove excess water and add to the pan.  Add soy sauce and stir.
  4. Cook covered for approximately 30 minutes, stirring occasionally. Take the lid off and turn up the heat for 10 mins or so to brown the potatoes.
  5. Serve hot ♥
