Kelp-Rice-Soup
From Clarissa Karthauser (WHOI)
Based on a childhood memory of something my father used to cook from (probably) dried kelp from the (probably) Asian supermarket in Germany. The combination of Kelp with rice reminds me of sushi a bit. So, I guessed that any flavors I like with sushi will likely fit well in the soup.
Ingredients
Kelp
Butter
Rice
Salt
Vinegar
Sugar
Soy sauce
Fresh ginger (grated or finely chopped)
Chili pepper flakes
Instructions
- Heat lots of kelp in butter in a pan. Cook until softened, but not crispy.
- Cook rice in a slight excess of water, with a bit of salt and splash of vinegar.
- Once rice is tender, add some sugar and soy sauce, along with some ginger and chili pepper spice. You can be creative with what spices to add!
- Add kelp to the soup and serve hot!
